The idea for CommonWealth began when co-owner Ethel Kruse tasted a canelé on a vacation to France with her daughter and fell in love with the flavor.
She left a long career in insurance to chase that flavor and the feeling of European cafés back home in San Antonio.
Kruse searched for a baker who could replicate authentic French pastries and found Vincent Dax, a third-generation baker from Bordeaux with deep roots in the craft.

He now crafts everything from scratch using European butter and techniques passed down through his family for generations.
The original location sits in a restored 1920s home on Davis Court, tucked away so it blends into the neighborhood like a secret worth keeping.
