Owner Kyle Vassilopoulos didn’t set out to make Cowfish famous outside Wyoming, but that’s exactly what happened when Tasting Table named it the best small-town restaurant in the entire state.
The honor came out of nowhere: a friend in the wine industry spotted the list and sent it along, and suddenly, a restaurant perched in the historic Coalter Block was getting national attention.
Chef Chris McDonald, a Lander native who has cooked in that same building for 26 years, earned a James Beard nomination in 2022, landing him among the top eight chefs across an entire six-state Rocky Mountain region.

What really cements Cowfish in locals’ hearts, according to Vassilopoulos himself, isn’t even the food; it’s the hospitality. He believes a humble dish served with genuine warmth beats a fancy plate served cold, literally and emotionally.
That philosophy shows up in the little things: fish flown in overnight from Seattle so it tastes ocean-fresh even in landlocked Wyoming, scratch-made everything with never a box-to-plate shortcut, and a commitment to buying local whenever the state’s harsh growing conditions allow it.
Then there’s the legend. Printed right on the menu is a whimsical tale, dreamed up by local cowboy poet R.G. Sauers, about cowboys discovering a strange half-cow, half-fish creature on the range.
