Chef and co-owner Salvador Alamilla was born and raised in Michoacán, Mexico, and moved with his family to Santa Ana, California at age five — where his mother’s kitchen became the classroom that shaped everything. 🌿
Watching her build salsas and tortillas from plants his father cultivated by hand ignited something in Salvador that no culinary school could have manufactured: a bone-deep reverence for where food comes from and why it matters.
He started as a dishwasher, climbed to Executive Chef at Whole Foods, then to Kitchen Manager at Eureka! Restaurant in downtown Boise — and when the opportunity came to open a restaurant entirely under his own vision, he and his wife Becca took it without hesitation.
Amano opened in the summer of 2019, and Caldwell has never been the same.
