How Tolon Won Fort Wayne’s Hearts

Chef Matthew Nolot started his restaurant career in 1988 at a Hardee’s on State Boulevard — not out of culinary passion, but because he wanted wheels impressive enough to get a girlfriend.

He got the girl. He also, unexpectedly, found his calling.

Over the next three decades, Nolot worked his way through Fort Wayne’s restaurant scene, honing his craft at city staples, drag-racing on weekends, and slowly building a philosophy around food that was as precise as rebuilding a carburetor.

His wife and co-owner, Nicky, grew up on a farm in north-central Indiana, where her parents and grandparents instilled in her a deep respect for sustainable agriculture, fresh ingredients, and the kind of food that actually knows where it came from.

The two were working together at Eddie Merlot’s when they made the leap — and in February 2016, Tolon opened inside a historic downtown building on The Landing, a 20-table room with no white tablecloths and absolutely zero compromise on quality.

Tolon became an anchor of the downtown Fort Wayne dining scene almost immediately after opening, and was recognized as part of the Indiana Foodways Alliance’s Culinary Trail — a statewide program celebrating authentic Indiana food culture.
