Infinitus Pie began when Katie Pie, while finishing her business degree at the University of Denver, approached her father, Pizza Pete, about starting a restaurant together. 🚚
Rather than jumping straight into a storefront, the pair started small, running a food trailer and opening every Friday in Lakewood, Colorado, to test recipes and build a following one pizza at a time.
That trailer eventually made the rounds at festivals across the region, where fans kept pleading for a permanent location so they could get their fix year-round.
That persistence paid off when the father-daughter duo finally opened their first brick-and-mortar shop in Wheat Ridge in November 2010, followed by the Broomfield location in February 2013.
The concept behind the name says it all: while regular pizza sticks to tomato sauce, iPIE explores infinite possibilities, offering nine distinct sauces, five crust options, and fresh toppings like roasted Anaheim chilis and locally produced Italian sausage.
The restaurant’s commitment to quality earned it recognition early on, being named “Best Of” by two Northern Colorado publications back in 2013.
