Lost Cowboy Brewing was born from a dream. Chef and Owner Michael Buckley — the culinary force behind the acclaimed Michael Timothy’s Dining Group — spent years traveling out West with his family, falling deeper in love with wide-open landscapes, slow-smoked meats, and the kind of rugged hospitality that makes you feel right at home.

When Lost Cowboy opened its doors in Nashua, it wasn’t just another restaurant. It was an experience. According to Buckley himself, the mission was clear from day one: “We’re constantly striving to make the dining experience a true dining experience in a very casual, fun atmosphere.”

The Phantom Gourmet called it “a real American experience,” and it’s easy to see why — the restaurant seats roughly 400 guests, features what may be the longest bar in New Hampshire with 84 seats, and pours six to eight house-brewed craft beers on tap at any given time. 🍺

• Rotisserie Prime Rib: Slow-cooked on a rotisserie for three to three and a half hours, seasoned with garlic, kosher salt, and cracked black pepper — served with au jus, mashed potatoes, and green beans. 🥩

• Hot Mess Fries: Big, crunchy french fries smothered in queso, scallions, and generous chunks of bacon — available loaded with pulled pork or brisket. 🧀

• Blackened Fish Tacos: A customer favorite featuring boldly seasoned blackened fish tucked into warm tortillas. 🌮

The 17,000-square-foot space features overstuffed leather chairs in front of a stone fireplace, mounted deer and elk heads, wildlife photography across the walls, a massive American flag, and a bar so long it’s been dubbed the longest in New Hampshire.

Country music plays throughout, 14 large-screen TVs keep sports fans happy, and a stunning outdoor patio sits just steps from the edge of a pond — complete with a fire pit surrounded by chairs that practically beg you to linger. 🔥
