Tucked into rural Belton, Texas, sits a wood-fired pizza destination that started with nothing more than a backyard oven and a high school sweetheart romance. 🔥
Fire Street Pizza is not a chain, and it never tried to be; it is the product of two people who spent years chasing a dream they had since their teenage years.
This is how Jason and Alis Brumbalow turned a homemade obsession into one of Central Texas’ most beloved pizza spots.

How Fire Street Pizza won Belton’s hearts
Jason and Alis Brumbalow wanted to open a restaurant together from the moment they started dating in high school in Killeen, Texas.
Jason spent years working as a producer and product developer for magicians, while Alis taught elementary school, but the dream of a restaurant never faded.
In 2015, the couple bought a plot of land from family and started building a wood-fired oven right in their own backyard. 🍕
What began as backyard pizza parties for friends soon evolved into Central Texas’ premier wood-fired food truck, and by late 2017, Jason and Alis were finally ready to open their brick-and-mortar dream on FM 439 in Belton.

What makes Fire Street Pizza a genuine hidden gem rather than just another pizza joint is Jason’s insistence on doing things the traditional way.
He noticed the area lacked an authentic Neapolitan pizza option, the soft, fluffy-crust style that originated in Naples, Italy, so he built the entire restaurant around a 900-degree wood-fired oven to nail that signature smoky char.
Every pizza starts with made-from-scratch dough and locally sourced ingredients, a decision that supports the Belton community while keeping the flavor genuinely fresh.
Add live music Thursday through Sunday, a pet-friendly patio, and yard games scattered around the property, and it becomes clear why locals treat a trip to Fire Street as a full evening out rather than a quick dinner. 🎸
