In the Spring of 2012, Liz and Jesse Huot launched Grind Gourmet Burger Truck — a small, scrappy food trailer built entirely on one principle: serve a superior, chef-driven burger using the best local and regional ingredients available, prepared by happy employees paid a fair wage.
By June 2014, demand had grown so powerfully that Liz and Jesse leaped a permanent brick-and-mortar location — first on Preston Highway, then eventually landing in NuLu, Louisville’s most restaurant-centric and creatively charged neighborhood, at 829 E. Market Street.
The restaurant received one of its biggest moments when Guy Fieri visited for Diners, Drive-Ins, and Dives — and left genuinely impressed, calling the house-made veggie burger’s texture “such phenomenal texture” after watching Jesse build it from roasted vegetables, quinoa, pumpkin seeds, and smoked tomato ketchup from scratch.
