The restaurant was founded by Michelle Smith, a Haleiwa resident whose son Jaxon — the restaurant’s namesake — was diagnosed with autism at around two years old.
Determined to find food that would support his health and happiness, Michelle dove deep into nutrition research and discovered that sourdough, with its natural fermentation process, is genuinely beneficial for gut health.
From that discovery, a pizza concept was born — one built entirely around the idea that food should nourish as much as it delights. 🌿

Every pizza is then fired in a custom-built kiawe wood oven that burns between 600 and 800 degrees, cooking each pie in just five to six minutes.
The restaurant has since changed hands, with the Danzick family now leading operations — and to their great credit, not a single thing that made Jax special was lost in the transition.
Director of Operations Isaiah Danzick has kept the founding philosophy fully intact, saying the goal remains simple: “The pizzas will all taste like they were made super fresh, and that’s what we’re going for.”
