How the Grotto won Arkansas hearts
Chef Rodney Slane never planned to build a restaurant around a cave.
His original vision involved iPads embedded in tables and an ultra-modern vibe.
But when he dismantled the stage of what had been a seedy dive bar that attracted metal bands, he discovered a live spring beneath it—the source of persistent water damage and that mysterious musty smell.

Around the same time, Slane picked up a large wood-fired grill for just $150.
Those two serendipitous discoveries became the foundation for an entirely different concept. ✨
Slane channeled the spring into a moat leading to outdoor drainage, transforming what could have been a liability into the restaurant’s signature feature.
He sourced oak trees from the property itself, drying and seasoning them in town to fuel the grill that would become the soul of his kitchen.
The result?
A dining experience so distinctive that locals and tourists alike began flooding the small 50-seat space.

By 2017, just two years after opening in June 2015, Grotto earned the Arkansas Food Hall of Fame People’s Choice Award.
The community response was so overwhelming that reservations became essential—a testament to how quickly this hidden gem captured hearts. 💕
What draws people back isn’t just the novelty of dining in a cave.

It’s Chef Slane’s mastery of wood-fired cooking techniques that coax deep, smoky flavors from premium ingredients.
It’s the dedicated lighting that makes the cave formation part of the décor.
It’s the consistent service quality that makes diners feel remembered and valued.
Locals praise it as probably the best restaurant in Eureka Springs, even if they acknowledge the premium pricing.
The wine cave in back—an actual natural cave that maintains steady temperatures for bottle storage—adds another layer of authenticity to the experience.
Slane’s commitment to quality extends to his vendors, proudly serving Creekstone Meats raised with compassionate animal welfare practices designed by Dr. Temple Grandin.

His philosophy centers on transforming familiar ingredients in unexpected ways, creating seasonally inspired dishes rooted in simplicity but elevated by fire.
That $150 grill purchase turned into a restaurant that defines Eureka Springs’ fine dining scene—proof that sometimes the best plans are the ones you never saw coming. 🌟
