Dominic and Liz Pietoso had been dreaming of opening Osteria Forto for over seven years before the doors finally opened in December 2023 — and the story behind the wait is one of the most compelling origin stories in the St. Louis dining scene.
The couple had been running a Cecil Whittaker’s pizzeria in Creve Coeur, quietly testing the waters every Wednesday night with what they called “osteria night” — a sold-out weekly pop-up featuring Dominic’s father’s extraordinary home-style Italian cooking.
“We would do our dream menu and have 80-plus people on a Wednesday night, with rave reviews,” Dominic recalls — until COVID shut it all down and the couple refocused their energy on finally making the dream permanent. 💪
