The story behind Smash Pizza starts with Brian Olsen, a Quad Cities chef whose fascination with food began as a kid watching reruns of Julia Child and Graham Kerr, according to a detailed feature from A Salesguy’s Guide.

In 2011, Olsen helped launch Crust Wood Fired Pizza and became a part-owner and managing partner there, later buying into a second restaurant, Central Standard, in 2017.
