In 2011, Sean Jackson left behind years of corporate restaurant management at chains like Hardee’s, Shoney’s, and Outback Steakhouse to buy a modest diner called Opal’s Restaurant on South 3rd Street in Richmond.
He renamed it Jackson’s Restaurant that December, and what followed was a slow, steady climb into local legend.
