Tucked into the historic district of Lewisburg, West Virginia, sits a wood-fired pizza spot that started life as a bicycle shop. 🚲

Hill and Holler began as a bike shop back in 2011, before a restaurant was eventually added to the space and quietly took over completely.

Today, it’s run by a local attorney and a dentist who never expected pizza to become their second full-time job.

This is the story of how two professionals with zero restaurant experience built one of Greenbrier Valley’s most beloved pizza destinations. 🍕

How Hill and Holler won Lewisburg’s hearts

The Hill and Holler name actually started as a bike shop, opened by Merrick Tracy in April 2011 in downtown Lewisburg, before relocating twice over the following years as the business grew.

By June 2015, the shop had moved into Montwell Park, and that’s when a restaurant was finally added alongside the bikes for the first time.

The very next year, Jody and Kate Wooton took over ownership of the business entirely.

Jody works as a local attorney, and Kate is a practicing dentist, meaning neither of them came from the restaurant world at all.

“I started in restaurants in college and in law school,” Jody has said. “We just love to cook! Our family will cook all day, all weekend when we have time. That’s where it came from.”

That genuine love of cooking is what carried Hill and Holler through nearly a decade in business, and thanks to supportive partners at their day jobs, the couple has managed to split their time between dentistry, law, and running a full-service wood-fired pizza restaurant.

The restaurant hit a major turning point in October 2024, when the couple made the difficult call to close their original log cabin location after years of being limited by lease terms and a pizza oven that simply couldn’t keep up with demand.

After a short closure, Hill and Holler reopened in February 2025 at 886 Washington Street, in a space five times larger than before, with a wood-fired oven that reaches around 900 degrees and can bake roughly 250 pizzas an hour.

Through every move and every renovation, the menu itself barely changed, and that consistency is exactly why loyal fans kept coming back to this Lewisburg restaurant no matter where it was located.
