Redbird began with four longtime friends—Sergio Pinon, Rory Martin, Jon Plude, and Thomas McCarthy—who met while working at high-end steakhouses and upscale restaurants across Tucson.
After countless shifts and late nights together, they started talking about opening a restaurant that felt more relaxed but still serious about quality.
They wanted a down-to-Earth concept that bridged sports-bar fun, family-friendly comfort, and chef-driven execution.

The result was a 100% locally owned and operated restaurant where every sauce, syrup, and seasoning is made from scratch.
When the original Oracle Road location opened in December 2023, it quickly drew crowds for its hand-smashed burgers, loaded wings, and craft cocktails.
Locals appreciated that Redbird partners with Tucson businesses like Mendez Bakery & Tortillas, Linda Tortillas, Sonoran House Coffee, and Maya Tea Company.

The Sam Hughes location, which opened in September 2025, sits inside the historic Rincon Market building, a beloved Midtown landmark.
